CANARY PUDDING

Ingredients
Serves: 4

75 Gram Self-raising flour
75 Gram Fresh breadcrumbs
75 Gram softened butter
50 Gram sugar
1 Lemon, zest only (piel)
1 Egg
2 Tablespoon Madeira or sweet sherry
4 Tablespoon Milk
Method
Grease a 1.1 litre pudding basin if making a steamed pudding, or a deep pie dish if baking the pudding.

Mix together the flour, breadcrumbs, butter and sugar. Add the lemon zest. Make a well in the centre and add the egg, Madeira or sherry and enough milk to give a soft dropping consistency. Pour into the prepared dish.

If steaming the pudding, cover with foil and secure with string. Steam for 1 1/2 - 2 hours. If baking, cook, uncovered, at 180 °C Gas 4 for about 1 hour, until well risen. Serve hot with custard.

Add 2 tablespoons of apricot jam or golden syrup to the pudding basin for an even sunnier-looking pudding.
