Lancashire Cheese and Apple Cake
Ingredients
15 Gram Butter
200 Gram Self raising flour
1 Heaped tsp Baking powder
75 Gram Golden caster sugar
725 Gram Dessert apples, cored and peeled
125 Gram Seedless raisins
1 Teaspoon Grated nutmeg
2 Eggs, beaten
110 ml Sunflower oil
150 Gram Lancashire cheese, crumbled
Method
Makes 12 slices
Generously butter a loose-based 23 cm cake tin. Pre-heat oven to 170 °C / Gas 3.
Sift flour and baking powder together. Add sugar, apples, raisins and nutmeg.
Beat eggs into oil and stir into the mix. Spoon half into the tin. Add cheese and top with the remaining apple mix.
Bake for 1 hour until golden. Cool in the tin for 30 minutes. Dust with icing sugar for decoration.
